Avocado Chocolate Chip Cookies

Dairy and egg free cookies have the tendency to be quite dry and „dusty“ after a few days... this is definately not the case with this lovely recipe with creamy avocado.

Ingredients (make about 30 cookies):
  • 1 small ripe avocado
  • 1 tablespoon virgin coconut oil
  • 50 ml agave syrup
  • ½ cup brown sugar
  • 1/3 cup vanilla oat milk
  • 1 cup coarse oat flakes
  • ½ teaspoon salt
  • 1,5 teaspoon tartar baking powder
  • ½ cup dark dairy free chocolate chips
  • 1/3 cup almond flour
  • 1/3 cup banana flour (or buckwheat flour)
  • 1/3 cup coconut flour

Mix the different flours with oat flakes, salt, baking powder and chocolate chips.

Peel and deseed avocado. Mash with a fork together with the coconut oil and the agave syrup until obtaining a smooth paste. Add brown sugar and oat milk and mix well with a whisk.

Add to the dry ingredients and mix until just combined.

With a teaspoon form little cookies and place on a baking tray lined with baking paper. Bake at 180º C for about 10-12 minutes and let cool on a wire rack before serving.

Store in a cool place in a tin.
