This hearty pie belongs to the basic foodstuff in Spain and South America... by the way – the empanada tastes best when it has set at least for one day. If you do not like tuna, you can simply skip it and increase the amount of onions and bellpeppers.
As I love the typical English Shepard´s Pie topping with mashed potato, I just combined it with a healthy and yummy nutbase and spinach avocado spread (thank you, Jamie Oliver for the inspiration;-)

Quinoa is one of the stars of vegan cuisine. Maybe, this is because of its high content of plant based proteins & minerals... or maybe it is just because of the nice taste and texture this grain from South America has to offer...
Millet is one of the basic grains I use - it is gluten free, inexpensive and can be easily combined with all kind of ingredients. It is the perfect match for kohlrabi, but you can try to fill any other vegetable with it as well.
A lovely alternative to the traditional lasagna with minced meat - and a good way to convince your kids to eat their veggies;-)
