Fig Jam

Fresh figs are one of the most delicious things I know - but this easy to make jam comes very close, especially when it is combined with a nice goat cheese.

Ingredients (makes 5 jars):
  • 1100 g fresh figs
  • 400 g brown sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • 20 ml lemon juice

Wash the figs and cut off the stems. Cut in quarters and mix with the rest of the ingredients in a blender until obtaining a smooth consistency.

Fill into a big pot and bring to boil. Simmer for at least 25 minutes. Fill in sterilized jars.
