Ingredients (makes 6 jars):
- 300 g physalis (cape gooseberry)
- 500 g orange (net weight)
- 300 g fresh passionfruit (net weight)
- 1 pinch tumeric
- 2 ripe bananas
- 300 – 400 g unrefined sugar (depending on sweetness of the fruits)
- 1 pinch cardamom
- 1 pinch salt
- 15 g apple pectin
- 1 tablespoon lemon peel
Peel oranges, generously removing the white skin. Add to a mixing bowl together with physalis, lemon peel, turmeric, bananas and blend until smooth.
Mix sugar, cardamom, salt, pectin and calcium in a screw-top jar and shake well to combine.
Add sugar mixture and passionfruit to fruit mixture and bring to boil in a wide pot. Cook at medium heat for about 10 minutes.
Fill the hot mixtures into clean jars, close tightly and turn the jars upside down for 10 minutes to seal.
If you do not have physalis, you can substitute with peach or apricots.
