Ingredients (makes approx. 600 g):
- 400 g cauliflower
- 100 g walnut
- 1 pinch cayenne pepper
- 1 teaspoon sea salt
- 1 tablespoon soy sauce
- 140 g tomato puree (concentrated)
- 1 teaspoon smoked paprika powder
Chop walnuts and cauliflower to minced meat size. Mix all the other ingredients and add to the cauliflower walnut mixture. Stir until well combined.
Put the mixture on a baking tray layered with baking paper und bake at 175 °C for 45 minutes. Stir well and bake for another 15 minutes or until relatively dry and crumbly.
You can use the veggie minced meat like "normal" minced meat i.e. for vegetarian lasagna or bolognese or as a filling for turkish börek or spring rolls. Just fry in olive oil with some finely chopped onions, a bit of garlic and some fresh parsley.
