Artichoke Fritters

Artichokes did not necessarily belong to my families favourites – especially the pickled artichokes from the can are no pleasure to eat at all for us. But since we started growing fresh artichokes in our garden, I began to experiment... and this recipe is just soooo delicious!

Ingredients (serves 2):
  • 6 medium sized fresh artichokes
  • 1 cup soy milk
  • ½ cup whole grain spelt flour
  • 6 tablespoons polenta
  • nutmeg
  • salt
  • lemon juice and lemon zest
  • ½ teaspoon lemon thyme

Wash the artichokes, remove leaves and cut in halves including the stalks. Peel stalks, remove the straw from the centre. Rub artichoke halves with lemon juice and store in a bowl with lemon water.

Bring the lemon water to boil with the artichoke halves and cook for 15 – 20 minutes or until tender.

In the meantime mix spelt flour with ¼ teaspoon of lemon zest and the lemon thyme. Whisk with the soy milk and season with nutmeg and a bit of salt and fill it into a deep dish. Fill the polenta in a second deep dish.

Drain the artichokes, then soak each half in the soy milk batter. After that roll in polenta and fry by batches in plenty of olive oil. Drain on kitchen paper und serve immediately with vegan mayonnaise.
