Ingredients (serves 2):
- 300 g cauliflower florets
- 1 large egg
- 50 g corn semolina (polenta)
- 1 medium sized onion, minced
- 30 g mozarella cheese, shredded
- 50 g Parmesan cheese
- 1 garlic clove, minced
- pepper and salt to taste
- 6 tbsp minced parsley
- 1 tbsp minced oregano
- virgin olive oil
Preheat oven to 190ºC (375°F). Line the baking tray with baking paper and lightly grease it with olive oil.
Steam cauliflower for 3-5 minutes or until nice and soft, drain and chop with a knife or blend in the food processor together with the onion and the garlic (just a few seconds, you do not want the cauliflower too mushy).
In a medium bowl, combine cauliflower mix with mozarella and parmesan cheese, parsley and oregano and season with pepper and salt to taste. Mix with a spoon until well combined.
Spoon about 1,5 tablespoon of mixture in your hands and form into small burger.
Place on the baking tray, spray with a bit of olive oil and bake for about 20 minutes until golden brown.
Serve as a starter with a rich tomato sugo or with a spicy dip.
