Sweet Potato Chips Featured

We have a lot of South American influences in the Tenerife kitchen. This is how I came to know and use sweet potatoes... These delicious chips are one of my favourites and a lovely side dish for barbecues, Burger or just a salad.

 

Ingredients (serves 1 - 2):
  • 300 g sweet potato
  • 1 tablespoon corn starch
  • 3 tablespoons virgin olive oil
  • ½ teaspoon pepper
  • ½ teaspoon sea salt
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika powder

Preheat the oven to 220º C. Line the baking tray with baking paper.

Peel sweet potatoes and cut into thick slices or wedges.

Put corn starch into a plastic bag and at the sweet potato slices. Close the bag and shake well to make sure that the starch sticks well to the slices. (Make sure, that the bag is closed!!!).

Mix olive oil, pepper, salt and lemon juice and add to the bag. Shake well to combine.

Put sweet potatoes on the prepared baking tray and distribute well. Dust with paprika powder and bake for 30 minutes or until crispy and golden brown. You might want to flip the slices once in a while...

Serve hot.
